My background

My career in the catering industry started at an early age. Helping in the kitchen and dining room at my grandmother’s hotel in York at weekends and during school holidays inspired me to train as a chef; I joined the Royal Navy as a junior assistant chef straight from school.
On leaving the Navy I studied for a HND in Hotel and Catering Management at Westminster College, London followed by a Degree in Hospitality Management and Related Services at Leeds Metropolitan University.

My career has been eclectic; I have owned my own restaurant, worked in conferencing and banqueting in prestige London hotels, set up and managed food and beverage outlets on board fast ferries, brought branded retail food operations to holiday parks, managed multi-site restaurants as an area manager, overseen Hospitality and Retail food offerings at prestige sporting events and served burgers from a truck in a field at the Irish National ploughing competition.

My passion for food continued when I retrained as a teacher in 2000. As a food teacher I have delivered food technology, Food Manufacturing, catering and related food study courses to both KS3 and KS4. Whilst working at the University of Lincoln, I set up and ran a variety of food related courses to increased flexibility students and industry staff. A big part of my role at the university was developing CPD course in partnership with industry for local food teachers.

My expertise

I am able to offer advice and guidance on a wide range of food related activities. In particular I have experience in setting up and equipping food rooms, developing systems and procedures to operate food rooms in a safe and hygienic manner.

I am able to offer Food Safety including health and safety through the Design and Technology Association. I am able to offer support on curriculum development, tracking and monitoring student performance, new teaching resources and writing schemes of work for KS3 and KS4.

I am able to offer CPD sessions in practical work and can tailor course to suit individuals or groups
